Quercetin is a pentahydroxyflavone with hydroxy groups at the 3-, 3'-, 4'-, 5-, and 7-positions. It is one of the most abundant flavonoids in edible vegetables, fruits, and wine. It functions as an antibacterial agent, antioxidant, protein kinase inhibitor, antineoplastic agent, EC 1.10.99.2 inhibitor, plant metabolite, phytoestrogen, radical scavenger, chelator, Aurora kinase inhibitor, and geroprotector. It is also a 7-hydroxyflavonol and a conjugate acid of quercetin-7-olate.
