Sodium benzoate is an organic sodium salt formed by replacing the proton in the carboxy group of benzoic acid with a sodium ion. It functions as an antimicrobial food preservative, a drug allergen, and an inhibitor of EC 1.13.11.33 (arachidonate 15-lipoxygenase) and EC 3.1.1.3 (triacylglycerol lipase). It is also an algal, human xenobiotic, and plant metabolite containing a benzoate group.
