Astaxanthin is a carotenone, specifically beta,beta-carotene-4,4'-dione with hydroxy groups at positions 3 and 3' (3S,3'S diastereomer). Found primarily in animals (crustaceans, echinoderms) and also in plants, it occurs as a free red pigment, an ester, or as a blue, brown, or green chromoprotein. It functions as an anticoagulant, antioxidant, food colorant, and metabolite in both plants and animals. It is a carotenone and carotenol derived from a beta-carotene hydride.
